It feels good to get back to our regularly scheduled Monday morning programming. “Dear Mark” is a way for me to keep my finger on the pulse of the community, to respond quickly and directly to any issues that may arise. I try to keep abreast of all this stuff, but there’s a lot, and some will inevitably slip through the cracks. When that happens, you guys pick up the slack and keep me honest and informed. These Mondays give me a chance to respond to the things I would have otherwise missed or put off until another time. Thanks for that.
This past week, I received a massive influx of emails from readers worried about the results of a new study. I figured it was a good idea to address it. Here are a few of the messages:
The leaders of the dietary establishment either keeled over or started arming themselves with pitchforks as I wrote that title. (It’s a good day to enjoy the subversion, I think.) On a serious note, let me unpack this worthy question – one I tend to get often: how does one incorporate more fat into a day’s eating? This common inquiry usually comes from someone new to the Primal way of eating; someone that has just started ditching grains and sugars and is having a hard time replacing carbs with the fats they’ve always been told to avoid. And replace, at least in part, they must, or experience the inevitable crankiness and hunger (and possible failure) associated with not eating enough food.
Of all the things we do for our health, I think we all find this to be one of the more enjoyable efforts – at least once we get the hang of it. Go as clean as you can of course – pastured and organic or as close to it as you can obtain and afford. (It ensures better nutrition and fewer toxins.) But let’s not get caught up in details today. I’m ready to dig in. Are you?

It’s that time again. Your inbox is filling up with emails from your low-fat friends. Your mom left four voicemails ordering you to throw away your bacon now (and clean your room while you’re at it). Your diet-savvy coworker left a Yahoo! News article on your desk, weighted in place with a muffin. This just in: High-fat diets cause diabetes—and researchers have proof, doggonit!
Today’s Dear Mark roundup is a trio of oil-related questions. Learn about my adventures with MCT oil and whether it fits into a good eating plan. Hear about camelina, the “better flax.” And finally, we’ll go over whether fancy, cold-pressed canola oil is worth including or whether it’s still just canola oil.
I’m thinking I’ll stick with this format for awhile. The response has been mostly positive, so why mess with what works? If ever a question arrives that merits a devoted full-length post, I’ll do that, but for now this seems like a hit.
The embrace (some might say exaltation) of butter is, in some respects, what sets the Primal eating plan apart from strict paleo. It is essentially pure animal fat with only minor traces of dairy proteins and sugars remaining, and for that reason I consider it a worthwhile staple. But, to answer the question posed in the title, not all butter is created equal. Most of us are in agreement that the nutritional content of the animal’s flesh depends on the content of its diet, and the same goes for butter.
We’ve covered similar ground with other foods – olive oil, cheese, chocolate, to name a few – but butter’s special. A quick glance around the forum and other online paleo/Primal/real food communities reveals that people are mad for butter. Perhaps it’s because we’re subject to a steady barrage of anti-butter propaganda from day one on this earth; perhaps it’s due to the fact that the stuff tastes like heaven and goes with nearly everything. Whatever the reason, butter knowledge is important.
If you’re truly interested in consuming the original Primal brain food, look no further than bone marrow: perhaps the first reliable source of large, fatty animal products our scrappy ancestors were able to procure. Yes, before we became spear-using cunning tacticians surrounding, stalking, and out-maneuvering large prehistoric ungulates, we feasted on the bones of fallen prey. Or, more accurately, we feasted on what lurked inside the bones (and the skulls, for that matter). Animal fat and protein improved the quality of our diet by making digestion less energy intensive. Bone marrow, especially, was highly caloric and nutrient dense, allowing early human ancestors to divert metabolic resources away from the costly digestion of roughage and toward bigger, costlier brains. This spurred the increase in hominid brain size that we still enjoy today.
Of the tropical oils, coconut gets the most attention, while palm oil gets mostly ignored. The virgin coconut oil has a fairly distinct flavor, but it’s one most people are familiar with, and it lends itself well to both sweet and savory dishes. Palm oil, especially the virgin red variety that gets all the attention for its positive health effects, also has a distinct flavor, but it’s one many people seem to dislike, probably because it’s so unfamiliar (in the US, at least; worldwide, palm oil is the most widely used cooking oil) to our palates. Scott Kustes had a guest post awhile back discussing the tropical oils, but I thought it would be good to give a short, comprehensive primer on the multiple varieties of palm oil.
It’s probably the one thing that prevents people from fully buying into the Primal Blueprint. Almost anyone can agree with the basic tenets – eating more vegetables, choosing only clean, organic meats, and getting plenty of sleep and exercise is fairly acceptable to the mainstream notion of good nutrition. The concept of Grok and a lifestyle based on evolutionary biology can be a harder sell, but anyone who’s familiar with (and accepts) the basics of human evolution tends to agree (whether they follow through and adopt the lifestyle is another question), at least intellectually. But saturated fat? People have this weird conditioned response to the very phrase.
“But what about all that saturated fat? Aren’t you worried about clogging up your arteries?”
Animal fats have recently been implicated as the cause of heart disease, obesity and, in a roundabout convoluted stretch of logic, global warming. If you let health officials tell it, they’re pure evil. Reviled, shunned, and lambasted by the general public (thanks to less-then-sterling endorsements by health officials), animal fats have really gotten a bad rap.
It wasn’t always this way.
We?ve written about the nutritional benefits of coconut, shared recipes that include coconut milk, and discussed the merits of coconut flour, but we?ve never actually fully covered one of the best coconut products out there: coconut oil.
Coconut oil consists of about 92 percent saturated fat and is therefore nearly solid at room temperature. It can be used in cooking, but is also a common ingredient in home remedies and skin care products.
Although it gets a bad rap in some circles for its high saturated fat content, we know that such fats can offer many health benefits. For example, coconut oil has been found to help normalize blood lipids and protect against damage to the liver by alcohol and other toxins, can play a role in preventing kidney and gall bladder diseases, and is associated with improved blood sugar and insulin control and therefore the prevention and management of diabetes. In addition, coconut oil has antiviral, antibacterial and anti-fungal properties. On a more superficial level, meanwhile, coconut oil is thought to help strengthen mineral absorption, which is important for healthy teeth and bones, and can also help improve the condition and appearance of the scalp, hair and skin when ingested or topically applied.
