You’d think a foodie with restaurant chef experience would have their food situation down pat right? Well, this chef didn’t. While I have always loved fresh foods, veggies, cooking from scratch and more…I found myself about to turn thirty and pretty damn unhealthy. Living with what was probably leaky gut and definitely a predisposition to autoimmune disease as a kid, I was sick, a lot. Combined with being overweight for as long as I can remember and a diagnosis for Hidradenitis Suppurativa when I was 13. I settled into a subpar quality of life and just dealt with it.

My journey is a bit of a roller coaster, and starting back in 2011. I had reached my all time heaviest, 250 pounds. At that time I decided to make a change. I started training for a 5k (my last 5k) and read Robb Wolf’s “The Paleo Solution.” I started losing weight, pushed myself to run on a treadmill at my company’s on-site gym and got ready for my Disney 5k through Epcot.

Prior to this, I would experience abdominal pain, irregular stool, and if going out to dinner, I would have to go straight home before having to get to the bathroom. Let’s just say that if we weren’t going straight home I got very good at knowing where the bathrooms were at different commercial locations. Along with this, I had high blood pressure, coupled with the abdominal pain (which I thought was an ulcer) and went looking for a doctor to test me for celiac disease.

Six years ago, I was a freshman at Kalamazoo College, majoring in biology and tentatively planning to go to vet school. I was known for my ability to pack away refined junk food and not gain a single pound. I was a two-sport collegiate athlete, starting goalkeeper for the soccer team, acing my classes, and working in a research lab. By all measures, my life was wonderful. That is, except for my eczema.

Looking back, I have always had thyroid issues though I had no idea what that meant in my teens and twenties. It apparently runs in my family, though with rural Alaska medical care in the 70s, you were lucky to have a doctor available, let alone a dentist. Even as I grew older and moved to the city and then to college in Arizona and life in many other places, I was always just not well. Though I managed to live and work and play fairly normally, I would occasionally have days that I could not get out bed, so I attributed it to depression or other more readily identifiable causes like depression.

I was doing great with my health following the USDA recommended high carb, low fat and moderate protein diet until the spring of 2000 when my health took a turn for the worst! I had recently turned 39-years-old when my body started to stiffen up.

I was working out at the gym three times per week, jogging 30 minutes twice a week, playing hockey twice a week, working at a stressful job, a father of two kids and a husband. The stiffness initiated in my neck then shifted to my jaw causing it to go out of alignment, which made it difficult to talk. As the stiffness left these areas, it moved to my lower back for a while, fortunately bypassing my hips and knees ending up on the front bottom pad of my right foot and finally stopped at the Achilles tendon on the left leg. All of my fitness training came to a screeching halt and I had difficulty working at my job.
