Preserved Lemons

Just as having a pantry full of preserved fruits or vegetables brings a feeling of comfort and a cheerful burst of color to your kitchen, so does having a jar of lemons preserving on your counter. Preserving lemons involves little more than cramming a bunch of lemons and salt in jar and letting it sit for a month. The end result is like a food version of lemonade: a little tart, a little sweet and pleasantly bitter.

Rather than eaten alone, preserved lemons are used as an ingredient, most often in Moroccan-inspired cooking. The intensely lemony flavor has a bit of a bite to it and is too strong to be a main ingredient; rather, preserved lemons should be thought of as an exclamation point, adding a burst of citrus flavor to finish a dish. Thin strips of preserved lemon can be added to braised meat, such as lamb, near the end of the cooking process. The lemons can be finely chopped with a shallot and parsley, mashed with olive oil or butter and spread on top of cooked seafood or chicken. They can be added to roasted vegetables, sprinkled into salads or diced and mixed with olives for an appetizer.

Homemade Coconut Milk Kefir

We love the tangy and fresh flavor of kefir, a fermented beverage often described as drinkable yogurt. However, those of you who aren’t as fond of kefir might say that describing it as “tangy” is a little too kind.  What, you wonder, is there possibly to like about what is essentially a glass of thick, sour milk?

Loads of healthy gut flora, for one. Probiotics have numerous health benefits and eating fermented foods like kefir is a great way to make sure you’re getting enough. But we’re not here to tell you that you should plug your nose and chug kefir just because it’s good for you. We’re here to tell you that after you try homemade coconut milk kefir, you’re going to chug it because it tastes really good. Unlike kefir made from cows’ milk, coconut milk kefir doesn’t have a strong fermented, sour flavor. It is pleasantly tangy, but the naturally sweet taste of coconut dominates. The texture is smooth and rich and slightly thinner than yogurt. Both the flavor and texture of homemade kefir is superior to any store-bought coconut milk kefir we’ve tried.

Halloween signals that the sugary season is upon us again, that willpower-testing time of year when bowls of candy and plates of baked goods seem to appear at every turn. If indulging at some point is inevitable, make it something that doesn’t divert too far from the Primal foods that will keep you feeling healthy during the holiday season. Enter Primal desserts.

You know what some of our typical dessert choices are; usually, the simpler the better. A square of (very) dark chocolate (dipped into almond butter, perhaps) or berries with whole cream don’t require a recipe and aren’t accompanied by a load of guilt.
