Apple-Stuffed Roasted Chicken With Sweet Potato Chips

After all the animal fat talk this week, I figured a recipe was in order. But how could I make a dish that revolved around animal fat? Animal fats usually are just cooking aids, rather than stars of the show – it wasn’t like I could just plop a few ounces of rendered lard on a plate and serve that up – so I had to somehow emphasize them. To accomplish this, I used three different animal fats in the making of the dish. Bacon lard coated the oven-roasted chicken, the apples cooked in goose fat, and the sweet potato chips were fried in freshly-rendered beef tallow.

Coconut Encrusted Chicken Salad

Yesterday we covered the many nutritional benefits of coconut oil, so I wanted to follow it up with a delicious recipe featuring this tasty fat. I tried this recently and it really hit the spot.

Chicken and Avocado Sandwich with Spinach Bread

Adapted from a lunchtime favorite from a hip Washington, D.C. bistro, this sandwich is hearty enough to see you through the final frigid days of winter but, with the inclusion of only the freshest ingredients, will have you thinking of summer afternoons spent lingering at a sidewalk café.

As an aside, we want to mention that in penning the spinach “bread” recipe we perhaps should have issued a warning that it can sometimes be…well, a little on the dry side (on par with, say, a drier rye bread or a seriously crusty loaf). However, the inclusion of the avocado provides the creamy texture you would usually rely on mayonnaise to provide, while the tomato offers both a burst of freshness and some much-needed moisture without veering into soggy territory.

Great suggestion. Slow cooking is more relevant than ever, with free time evaporating and the need for easy Primal fare made with minimal effort only increasing. When the novelty wears off and the prospect of coming up with home cooked Primal meals every day begins to loom, I think a lot of people will turn to the crock pot.

Slow-Cooked Cabbage, Tomatoes and Meatballs

Last week we discussed the merits of canning your own foods. So you canned a bunch of tomatoes and now you need a good reason to use ‘em! Enter the following unstuffed cabbage recipe:

Ingredients:
1 large head of cabbage
1 pound of ground meat (turkey, chicken, beef…you decide)
½ pound of spicy sausage, casing removed
½ cup minced onion
1 tsp caraway seeds
1 tsp ground coriander
1 tbsp garlic powder
1 16 oz can tomatoes – including the juice
3 tbsp vinegar
1 carrot – unpeeled, ends chopped off
Salt and pepper to taste

Ok. Ok. Yesterday’s “What’s for Dinner Tonight?” post may not have appealed to everyone. I hear you. Organ meat, especially to people that have never experienced them, can be challenging in more than one way (if you can accomplish selecting and preparing it you still have to – gulp! – eat it). For everyone that can’t get past thinking that offal is just plain awful here is a quick and easy recipe that is sure to add a kick to conventional chicken recipes. And, while I realize it does contain a little cheese – which generally falls into the gray area of sensible vices – there is so little, that it won’t throw your Primal eating plan off its tracks.
