Keto Kale Avocado Gazpacho

Cool summer fare means more than just Big-Ass Salads. Nothing is off the table, including soup—particularly gazpacho. A perfect summer classic, this gazpacho recipe is a keto lovers dream: loads of flavor and lots of healthy fats, thanks to the goodness of extra virgin avocado oil.

Time In the Kitchen: 15 minutes (plus 30 to chill)

Ingredients:

Instructions:

Blend all ingredients in blender. Add salt and black pepper to taste.

Chill in refrigerator for 30 minutes.

Optional serving suggestions: avocado slices, diced tomatoes, minced red onion, sour cream, cilantro leaves

  3. If tomato is not the first ingredient it’s not gazpacho. Gazpacho is a Spanish dish and I’m spanish. I know what I’m talking about. Gazpacho is a tomato soup with a 20% of green pepper, onion… But the 80% is tomato. That recipe is not a gazpacho, sorry but it is the truth.

Both are so easy and so quick and can be switched up on the fly. Whats that, you want a chocolate cheesecake or some key lime cheesecake? Easy enough to make it happen with a lityle imagination.
