Research of the Week
A recent vision study finds that men are better at detecting rapidly moving images and perceiving fine detail, while women are better at discriminating between colors. The study’s author was unable to establish a clear evolutionary reason for this development, but I’d love to hear your guesses.

According to a new independent report by Consumer Reports, rice and rice-containing products are showing up with high levels of inorganic arsenic, with brown rice tending to have higher levels than white rice (due to its accumulation in the hull).

Researchers have documented the step-by-step process by which an organism evolves a new function. Big whoop. Now do macroevolution.

(Kidding with those last two sentences, of course.)

Dairy-Free Green Goddess Dressing

This recipe for Dairy-Free Green Goddess Dressing turns salad into a sumptuous feast. The creamy texture is outrageously good, without any dairy or mayonnaise. How? The trick is blending a little coconut milk with avocado then adding an abundance of fresh herbs to drown out the coconut flavor. The result is a savory, herbal, garlicky dressing that’s shockingly good over greens with chicken, steak or salmon.

You’re welcome to top greens with leftover chicken and drizzle a little oil and lemon juice on top, but why, when you could have a Green Goddess Chicken Salad with Bacon? Simply toss chunks of cooked chicken in Green Goddess dressing and pile it high on a bed of romaine (and other veggies too, if you like). Top liberally with crumbles of bacon and you have a salad you won’t soon forget.

As a chiropractor, I thought I’d been taught everything I needed to know about nutrition. The “studies” prove it, right? Whole grains are king, aren’t they? My vegan nutrition professor who was so incredibly thin couldn’t be wrong. I have a strong background in nutrition, yet as I aged, I felt crappier every year.

After my doctorate program was over, I was left with the gifts of bad eating habits: “healthy” carb-up and caffeine-up through exams, regular sickness, chronic fatigue, migraines and mental fog that made working out like I used to almost impossible. It was a worse version of what I remember feeling as a teenager on the tennis court. Horrible low blood sugar after the first set, poor focus, SUGAR BURNER! Yikes! And I had a doctor for a dad who I still argue with over the new rules that you promote. (His belly and visceral fat has been an issue since he was 40 on his Mediterranean diet).
