		<description>I can&#039;t help but I always cook my entrecote stakes in a raging heat on a cast-iron pan. About 1.5min per side and the stakes are nicely seared and medium-rare. I wonder if cooking for such a short duration is really detrimental to the meat?</description>

		<description>What about roasting vegetables?  There&#039;s a big trend now to roast vegetables to maximize flavor, etc.  It&#039;s high heat - 400 to 450 - but not so long.  Is that a total burn of nutrients?  Thanks.</description>
