		<description>Offal provides wonderful nutrition, at a budget price. I encourage everyone to eat it.

Ox liver is my current favorite. I&#039;ve yet to try sweetbreads, but have tried everything else mentioned in this article.

I recently acquired a freshly killed 50 lb pig which sparked my interest in learning how to prepare the &quot;nasty bits.&quot; I ate some liver, kidney, the heart and used two feet in soup. tried a slice of what I thought was pancreas but might have been spleen... afraid the rest of the offal went to waste. never again, I am prepared!</description>
