Imagine you’re George Clooney. Take a moment to admire your grooming and wit. Okay, now imagine someone walks up to you and asks, “What’s your name?” You say, “I’m George Clooney.” Or maybe you say, “I’m the Clooninator!” You don’t say “I’m George of George Clooney Sells Movies Blog” and you certainly don’t say, “I’m Clooney Weight Loss Plan”. So while spam is technically meat, it ain’t anywhere near Primal. Please nickname yourself something your friends would call you.

    Jicama Corn Bread

    2 large jicama
    2 eggs
    baking powder
    salt
    baking soda
    buttermilk
    Almond Flour

    Preheat oven 450
    Peel Jicama, cut large chunks, food processor (run Jicama under COLD water while you peel it, its easier to peel that way)
    Consistency potatoes desired
    Use cheese cloth or old shirt in strainer and squeeze out extra water

    1 cup jicama mash
    .5 cup almond flour
    1 tsp baking powder
    1 tsp baking soda
    3/4 tsp salt

    Mix

    Add two eggs, Mix
    Add buttermilk a little at a time until just clumping like cookie dough batter (abt 1/3 to 1/2 cup)

    glass or cast iron, melt 1 tbl bacon grease or lard until almost smoking hot.
    pull out of oven pour in dough and spread evening, bake 18-22 minutes. Good with butter / chili and can be toasted.

  8. WOW, thanks for that idea! I’m a big cornbread fan too so i’ll need to keep an eye out for jicama so I can try this. I used to do a yummy honey/cheddar/jalapeno cornbread… mmmm.
