Who Invited Vegetarians To My Dinner???

Thought you guys would be amused at this: every Thursday night, my neighbor Leia and I host a "Muffin Party", aka: Girl's Night In. I was asked to bring a curry dish (of course).
So, I got the invite on Facebook yesterday, and discovered to my chagrin that I was to be making a Vegetarian Curry and Tandoori Chicken. Well...I'm down with the chicken...but a Veggie Curry? They wanted Channa Masala; but I would at least like to eat both things I'm making.
After some thought, I announced our veggie selection would be Palak Paneer (the Pakistani name for Saag Paneer, Palak being Urdu for Spinach). At least I can eat that, although there is some dairy.
What I'm wondering, is how did I end up with all these Vegetarian friends? I love them, even though they eat dumb food ;-) Jeez....they're EVERYWHERE.

Why can't you eat a vegetarian curry? (If it has tofu in it, just pick around the stuff.)

I married one! Well, actually he's not one anymore :D but keeps threatening that he'd go back to eating vegetarian after giving meat a try for a few days. But I digress.
That's funny Kuno! Thankfully, they didn't ask you to make a pulao or biriyani. Hahaha, dumb food indeed!
ETA: BG, Channa is chickpea.

Ahhhh, thanks Maba. When I was veg, I loooooved chickpeas. (Still do, but I don't eat them anymore!) :)

There's nothing wrong with eating vegetables. It's the non-eating of meat I don't understand.

F'm I would sub a real primal veggie curry, by that I mean no Pulse, tofu or paneer. How about Gobi Masala.

Here's a great curry recipe, if you're OK with yogurt. Since you're making a chicken dish, you can leave out the chicken and add more veggie. I made it with cauliflower instead of broccoli, and I left out the water chestnuts simply because I was too cheap to buy them:

I feel ya kuno, it can be a challenge. My brother`s fiance is a VEGAN!!! I just try my hardest to fatten her up by loading everything I make her with CO and coconut milk. I feed her a lot of quinoa, veggies, and my chana masala uses califlower instead of chickpeas. ;)

I work in an office of a big hospital with what I call Chickavegetarians (they say they are vegetarians but everytime I see their plates they have chicken on them except when we have a potluck--then it is nothing but pasta salad as far as the eye can see).
I find them very amusing.
They are always getting sick and always snacking on carbs, and they feel so sorry for me-- poor thing, eating all that fat and meat and gross stuff.

thecarla- that gave me a chuckle. I know some *veggies* that eat fish and chicken. Sorry but that does not make you a vegetarian! Pasta salad is a staple for them.

Oh yes, I have some vegetarian friends that eat fish. Go figure. They eat A LOT of pasta. I would really like to suggest this way of eating to them as they both suffer badly with (ahem) digestive problems, but TBH, it would be such a long, hard struggle getting over the meat thing.... oy!

I've never forgotten a great Lil Caesar's ad from maybe 20 years ago. The camera is at eyeball level, you can see pizza boxes in front, the delivery boy is going down a hallway with doors, eyes darting left and right, and the music is the Jaws music! Bum-bum-bum-bum, that anticipation of something bad about to happen.
He comes to a door marked "American Vegetarian Society" and flings it open. Lots of screaming and running.

A former colleague of mine was a pretty ardent vegetarian. At the time, I was one, too. I knew she had quite terrible arthritis, though she was an avid walker and biker. She did begin to eat some fish, mainly due to the recommendation of Dr. Weil, but still ate A LOT of soy and wheat products. I ate the same way, but excluded fish completely and could never pinpoint why I started to have very achy joints at the age of 24. I started taking glucosamine and flax oil, but continued to eat the same v*gan diet. It wasn't until I left that job, started eating meat, and cut all wheat from my diet that I put two and two together. I don't have the joint pain anymore. I'd love to get in touch with my former colleague and clue her in on a way to ditch her severe arthritis, but I think she'd be horrified at the idea of eating meat and fat.
