What should I make for dinner?

  1. Running out of ideas on what to cook with my hamburger. I am burnt out on hamburger patties topped with bacon/avocado and meatballs. I put hamburger in my spaghetti squash lasagna earlier this week so that dish is out. Barbeygirl's hamburger casserole is a good one but I've already done that a few times. Isn't there anything EXCITING that I can do with this hamburger?

    How about taco salads. Using taco seasoning from scratch?

    This one is really good

    1 tablespoon chili powder
    1/4 teaspoon garlic powder
    1/4 teaspoon onion powder
    1/4 teaspoon crushed red pepper flakes
    1/4 teaspoon dried oregano
    1/2 teaspoon paprika
    1 1/2 teaspoons ground cumin
    1 teaspoon sea salt
    1 teaspoon black pepper

  5. I just made a sautee with sage and cranberries and that was yummy.

    Beef stew? Cabbage rolls? Stuffed peppers?

    Taco "soup"
    Browned beef, onion, losta tomatoes, chopped peppers, taco seasoning, cilantro, green chilies, cabbage, beef/chx broth...

    Ooh Cabbage rolls are AWESOME! Those are going to be in the crock pot on Sunday actually. I go off of Son of Grok's cabbage roll recipe (and change it a bit of course). I like half ground beef half spicy pork sausage :)

    I thought that recipe for "enchiladas" (ground meat stuffed into long peppers and onion and veg etc and mexi flavorings, smothered in enchilada sauce and baked) looked promising!

    What about a frittada, or a quiche (with my mushroom crust).

    I'll do more brainstorming... :)

    I think the curry idea is taking hold though. Don't worry I have like 15 packages of hamburger so these ideas will all get used (even the meat hand!)

    Now off for another shot of tequila before the curry making begins...

    Chile rellenos casserole:

    Ingredients:
    1 pound lean ground beef
    1/2 cup chopped onion
    4 cloves of garlic minced
    1/2 teaspoon salt
    1/4 teaspoon pepper
    2 cans (4 ounces) whole green chiles, cut in half lengthwise, seeded
    1 1/2 cups shredded Cheddar cheese or Mexican blend of cheeses
    1/2 cup cream
    1/2 teaspoon salt
    dash pepper
    6 beaten eggs
    hot pepper sauce

    In a skillet over medium heat, brown ground beef and onion, add garlic near the end to prevent burning. Sprinkle beef with the first 1/2 teaspoon salt and the 1/4 teaspoon pepper. Place half the chiles in an 11x7-inch shallow baking dish; sprinkle with the cheese then top with beef mixture. Arrange remaining chiles over the beef mixture. Combine cream, salt, pepper, eggs, and several dashes of Tabasco or other hot pepper sauce. Beat until smooth. Pour over meat and chile mixture. Bake at 350° for 45 to 50 minutes, or until a knife inserted in center comes out clean. Let Chile Rellenos Casserole cool for 5 minutes before serving.
    Chile rellenos casserole serves 6. (I'm sure you could half the recipe!)

    I think this recipe sounds really scrummy and I would probably serve it with fresh salsa and sour cream.

    Italian wedding soup: (One of my faves!)

    4 cups Chicken Stock
    1/2 cup white wine
    small meatballs with italian seasonings
    endive, spinach or kale
    whatever other veg you'd like to throw in!
    chopped onion, minced garlic
    red pepper, small diced.

    Start off your stock with half an onion, bay leaf, some garlic. Strain these out once the stock has simmered for a while.

    In a skilled, sautee chopped onion, garlic and add red pepper at the end. Add 1/2 a cup of white wine and allow to reduce a bit.

    Cook the meatballs in the stock with the veg, add the skillet's contents, and add the chopped greens in at the end and allow to wilt. Salt and pepper to taste. Super yummy!

    Grass fed burgers (teryaki, potato rolls) for the first time in a while tonight. Tomorrow morning is scrambled and chorizo. BOOM!

    Coconut Curry w/ Ground Beef

    1 cup coconut milk
    1 Tbs red curry paste (+/- depending on how spicy you like it)
    1 lb ground beef
    Onion
    Ginger
    Veggies: I used cauliflower, carrot, broccoli, peas, & kohlrabi greens - use whatever you have
    Thai or Vietnamese fish sauce (you could use tamari if you don't have fish sauce, but it gives the curry a more authentic flavor)
    Other additions: lime juice, cilantro

    Put 1/2 can of coconut milk in a large pot, add curry paste and break up. Add onion, cauliflower, carrot, and ginger. Add rest of coconut milk and water or broth if you want it more liquidy. Simmer. Lightly brown beef in a skillet (can be rare). Steam broccoli & kohlrabi greens separately. When cauliflower & carrots are tender, add all other veggies and beef. I didn't have lime juice of cilantro, but those would have made it even better!

    earthmomma! I made your Chile rellenos casserole today! It was awesome and so easy. Will definitely make again.

    I do want to make that Coconut curry with ground beef next. Thanks for posting it Annika.

    How about chili?

    I would think a ground beef curry might be considered a kebab like kafta kebab.

    There is a Jamaican dish with curry and ground beef known as pasties (I think that is the right spelling, I don't mean to refer to stripper-wear), they are like like turnovers or empanadas. you might just make the filling as patties, like those skinless gyoza.
