    Yum meatloaf :)

    I met TaraTootie today! It was so cool to meet someone!

    Dinner was good, I also had some in shell almonds and almond butter with my meatloaf/mashed cauli/ketchup, 16 carbs total today!

    It was a good Survival week, I'm happy with it :)

    I had an AWESOME day!!!

    Breakfast was... ready for it...

    Primal pizza! lol My toddler insisted that he NEEDED pizza. Hee hee. Still trying to perfect a coconut flour/almond flour crust, but I'm close.

    Then a pink grapefruit for a snack. I am floored that I can enjoy a grapefruit without gobs of sugar!!! Yay!

    For dinner, I made the yummiest ginger pork satay. Mmmmm... so good, and I served it on a bed of spicy cabbage that I sauteed in bacon grease. OMG good. Why haven't I been eating cabbage?!? I love it!

  3. I can't believe survival week is "over." I put it in quotes because I'm continuing over the weekend and through next week. :)

    Primal pizza sounds yummy. :) And so does your cabbage! I loooove cabbage.

    I had a small victory today! You know the kid I babysit who eats tonnnnns of grains and fruit ALL the time? (At least it's not straight-up sugar, but close.) Well tonight I babysat him and instead of making him fish sticks or chicken nuggets which is what his parents suggested, I dug out a chicken breast from the freezer and thawed it out.

    I opened up all the spices one by one and let him smell them and decide which ones he wanted on his chicken. He picked (with a little guidance) garlic salt and basil. So I cut up the chicken into little pieces and cooked it in a pan with those... and also steamed some broccoli in the microwave.

    He ate ALL his broccoli (mom says he loves it) AND almost the entire chicken breast - probably ate about 5 oz of chicken. So when mom and dad got home I said, "[Boy] had a really good dinner! He ate almost a whole chicken breast." Mom's eyes went wide and she said, "you mean in nuggets? Like a breast's worth of chicken?" I said, "No, like an actual breast." She said she was really surprised because he's just not very into meat. So I told her about how I let him help by picking the spices.

    Hopefully she'll use that technique in the future. This is a kid who LOVES to be involved, so including him in the process is a motivator for him.

    And YAY! I fed him a real primal meal. :) I just wish they had butter in the house so I could've gotten in some fat for him... they only have margarine.

    Next task? Try to get him to like eggs. He is NOT a fan. I made him an egg last week (he asked for one when he saw me making some for myself) but he only ate one bite. Mom said he isn't into eggs.

    I make REALLY good creamy scrambled eggs though and he loves cheese, so maybe if I make cheddar scrambled eggs he'll eat them. Maybe I'll give it a try tomorrow for lunch. They always have lots of cheese.

    I'm trying to get my kiddo to like eggs, and so far, not much luck. I had a bit of luck letting him sprinkle his own cheese on scrambled eggs.

    He will gobble up egg drop soup though, he thinks the eggs are noodles!!!

  5. ooh egg drop soup is a good idea. Plus he's been sick so that would be a good warm protein-rich thing to eat. I wonder if they have chicken broth...

    How do you make yours? Usually I just do broth/stock, some soy sauce, sometimes a little oyster sauce, splash of lemon juice, then the eggs drizzled in. I'm pretty sure the "real" stuff has cornstarch to make the eggs "hover" more...

    Well, I caved to my chocolate last night, ended up at 25 carbs for the day. BUT, I woke up this morning 2 pounds down! So chocolate = losing two pounds :D

    Just kidding of course :) It's the two or one meals per day that does it. And what's interesting is that I'm still eating an average of 1,600 calories per day, which at 5'2" is considered "maintenance" for the most part. I'm keeping up with the majority of Survival Week mentality for the next couple of weeks too, though I've been doing that for a while anyway with a bigger eating day when I need it.

    I had leftover t-bone steak for breakfast, I love having awesome steaks in abundance in the freezer! Then hiking with a friend this afternoon, and probably meatloaf leftovers for dinner :) Yay for the weekend, and yay for clear, sunny 62 degree weather in November!

  7. Well, survival week was a bit odd for me - suffering as I am with sciatica, it really put me off my food. Anyone that's been following my 30 day challenge will see that I've been low on the calories, but the fat/protein/carb ratio has been good. I've not weighed myself but as I ventured to the pool to try and exercise without undue agony, I noticed that my legs look more defined and the costume doesn't ride up my bum cheeks like it used to! So, that's good, yes?

    Roast chicken tonight! And I had mackerel, tomatoes and cucumbers for breakfast, which was scrumptious!

    I have to say, it didn't feel like a hardship - I love this way of eating! :)

    Woo, I had another 24 (really 25.5 hour) fast yesterday! It just happened that way and I hardly had any hunger! Then we went out to eat with another couple and I did have a wee bit of dairy (oops) in the form of two bites of goat cheese with butternut squash and some parm. cheese on top of my parsnips. I also had a good sirloin and some skillet greens. What a great meal!
    I def. lost body fat this week. Feels good to start to see my thighs not touching again!
