Hmm... I've never used cardamom or fennel. I don't think I even have any, but would love to give it a try.
I'm really looking forward to the end of Survival Week. My dad dropped off some more "gifts" (not realizing I'm going Survival for the week), so I've got some peaches, mascarpone cheese and lamb chops. Chops went in the freezer but I'm struggling not to devour the peaches and cheese. They're getting ate tomorrow for dessert. :)

Oh my gosh that all sounds amazing...I had lamb chops on Sunday and they were awesome! And the peaches and marscapone...add some toasted pecans and you've got a delicious dessert :)

Ohh, I don't have pecans but I do have almonds and sunflower seeds. Maybe I can come up with something.
My dad rocks! He's such a foodie, like me. I can go to my parents' house and we'll just sit and watch FoodTV together- lol. My mom learned a long time ago never to send us to the grocery store alone, or we'll come back with $400 worth of stuff we didn't really need. :P I also love how supportive he is of my dietary choices. I guess it's because it includes lots of meat and fat, and what guy doesn't support eating meat and fat? LOL

You are so lucky having a dad like that, mine also brings me lovely gifts of vegetables from his garden and I still get excited when I receive my veggie bag of amazing home grown produce.
Mmm peaches sautéed in butter with toasted almonds and a big dollop of mascarpone…just a suggestion! :)

BTW, what is Mascarpone? I adore cheese, but I can't call myself a 'cheese connoisseur' since I am still ignorant in all of the many kinds of cheese out there.
(Drug my husband to the "Cheese Festival" here in Seattle for our 11th anniversary! He still says the cheese was nasty, but I loved it! Just shows how much he loves me to be dragged out to downtown Seattle on a 95 degree Spring day to eat cheese next to hundreds of sweaty Seattleites!)

Woah, what a weekend so far.
Yesterday was a little nuts. I had a good workout at the gym. Breakfast was fantastic. A peach with mascarpone cheese and protein shake.
I had a noon-time date so we went to the farmers market then hiking. OMG, my legs are so sore! It was a blast even though we got caught in a rainstorm. Nothing too horrible.
I ended up IF-ing most of the day. Didn't eat anything until dinner time. We went out to a cool little bistro. I got a delicious duck salad. Mixed greens, pecans, goat cheese, duck and raspberry vinaigrette dressing. SO good. After that we went to go see Food Inc. If you haven't seen it, you must! I've gotta get everybody in my family to watch it. Very profound.
Had some trouble with breakfast this morning. Cooked up yet more smoked pork with spinach, and scrambled it into some eggs. I wasn't really that hungry so I didn't finish it. I'm a bit dehydrated from yesterday so I'm going to have to remedy that, after my yummy cup of coffee is gone.
Well, off to the flea market. Maybe I can find some cheap produce.

I think I ate too much for dinner, and I'm getting tired of smoked pork.
Still eating the giant slab of pig. I decided to get a little creative in the kitchen when I got home from work, and now I've got a huge mess to clean.
Breakfast: Smoked pork scrambled eggs.
Lunch: Pork with homemade carrot slaw.
Dinner: Pork w/ barbecue sauce, wrapped in romaine leaves. Then came the creative part...
I decided to make cucumber juice. Diced a large cucumber and threw it in the blender with a bit of water and hit frappe. When it was green froth I strained it through cloth and got a lovely bright green juice. After sampling I opted for a bit of stevia. It's gorgeous and I can't wait to show it off at the next picnic.
There wasn't much pulp left- about the size of a ping pong ball. I mixed it with an egg and made a couple of little pancakes out of it. Texture was nice, and appearance unusual. Flavor was naturally bland. Any suggestions on how to add a traditional "pancake" flavor?

oh my GAWD diana... I made carrot chips today to break my fast. Used coconut oil and after tasting them decided against the cumin (though I'm sure it'd be great) and just tossed them with a little sea salt.
SO GOOD... sweet from the carrots with salty = bliss
When I write it up for my blog how do you want me to credit you? And do you want me to link to a site (like if you have a blog) or anything?

Umm... I don't know. I don't really have a functional blog yet so maybe you can just link to my twitter, facebook, or something. That would be cool. I'd like to twitter my concoctions regularly. I just made some Primal No-Bake "cookies" (though the recipe could stand for some tinkering.)
And DBK, that cucumber juice does look amazing doesn't it? I'm imagining up how I can use it as an "adult beverage" for Halloween. :D

I have been eating like a horse lately, for no apparent reason. *sigh* As long as I can maintain my weight I'll be ok.
Mostly it's a lot of smoked pork, smoked pork, and more smoked pork. I can't wait until this thing is gone. It's about half-eaten now.
I decided to make up some sort of barbecue sauce. I got a can of organic tomato puree (so sweet!) and added spices and stuff. It doesn't taste like the bottled stuff at all, but it's not bad. I'll be eating that for a few days, but at least it's healthy.
Oh, and the "cookies." I was in the mood for something crunchy and sweet, so I melted a bar of Green & Black's 85% and mixed in sunflower seeds until all the chocolate was used. Dropped spoonfuls onto wax paper and popped them in the freezer. They look a lot like the cookies but taste 100x better. :) I'm resisting the urge to eat a 3rd. LOL

I second FNW’s oh my GAWD, carrot chips are the best, I made some last night for dinner (again), they go lovely with chicken by the way.

Carrot chips rock! I had them again today- lol.
Yup, I'm STILL eating that pig. It's almost gone. I made another big crockpot full of pork barbecue and tinkered with my home-made barbecue sauce a little. I'm hoping to come up with a brilliant recipe that nobody can top! I think I have enough pig for another crockpot full, at least. It was about 17 lbs, but that's including the leg and hip bone. BIG chunk of meat.
I also tinkered around with making sunflower seed butter. OMG, it's so good! I had some spread on apple slices for dessert. Totally droolworthy.
So yeah, my diet has been pretty uneventful lately. Eggs and mushrooms with pork bbq, pork bbq with salad, pork bbq wrapped in lettuce leaves, and apples with sunflower butter. That pretty much covers my day.

I have a large slab of pig in the crock pot right now! Can't wait to come home to a sweet pork-aroma in my kitchen tonight!
I have been super busy, so I haven't made any nut butters yet, but I'll be sure to try the sunflower one. I guess they have higher amounts of Omega 6, so I am trying not to eat too many of those.
Are ya about done with Pork yet? LOL!

Wow, I have totally neglected my journal lately!
It's been a pretty good weekend, full of food. I'm starting to believe my calling is in food, somehow.
After eating pork for about 10 days solid, I had to break free. I ended up IF-ing most of the morning yesterday. I snacked here and there. Berries, an apple, some sunflower seed butter. I went to my parents house to weed the garden, and ended up snacking on wild carrots and wood sorrel the whole time. I never knew weeding the garden could be so tasty.
Having eatin nothing of substance most of the day, I was famished and craving protein. For dinner we had steak, shark, grilled veggies and marinated tomato/cucumber salad. It was delicious! I also made some cucumber juice for everyone to try.
Today I ate more. Eggs scrambled with mushrooms, an apple with almond butter, chicken wings... then for supper I ate a dish of wild fish my sister and her BF caught. Now I'm pigging out on cherries and blueberries. I ate the whole pint of blueberries and I'm really glad I didn't buy that many cherries. Since this week is survival week I'll be really looking forward to Saturday when I can buy more berries!
It's back to the pork tomorrow. I heated the rest of the pork in the oven then separated the meat, the skin, and the bone. I made a bone broth and added pork, onions, mushrooms and spices. There's a ton of it, so that will be lunch for the duration of the week. Survival at its best.

Ok, I'm frustrated. The belly blub remains! I blame stress. Being in charge at work is great, but damn it's stressful. I can't wait til the boss gets back from is vacation.
I totally slept in today instead of going to the gym. I've been really bad about getting to bed on time. *sigh*
So I've been doing this dating stuff lately too. It sucks, horribly. Why can't Mr Awesome just come knock on my door already? I guess the problem is finding somebody as weird as I am- lol.
Ugh. Just needed a little ventilation.

People really tick me off. I'm so mad I could spit!
Twice now- TWICE- I thought I had my treadmill sold. The first time the buyer cancelled, fine. That was before I pushed the beast into my bedroom, through a too-small doorway, into the closet.
Along comes buyer number 2. Everything's all set. I'm to deliver the treadmill at 6pm on Friday. Good. Yesterday I haul the treadmill back out of the closet, back through the too-small doorway, and into the middle of my livingroom.
Well it's a damn good thing I called her to confirm! "Oh, right... we bought another treadmill yesterday. Sorry."
What the hell!? There would have been serious trouble had I gotten the stupid thing down the stairs, loaded into the truck and taken to her house to find out she didn't want it. I'd have had to drop it on her head. Hard.
Now I have the stupid thing sitting in the middle of my livingroom. I am NOT pushing it back into the bedroom closet and there's nowhere else to put it. It's just going to have to stay there until somebody comes to take it away.
Ohhh! I'm so mad!

I say take a rest! I didn't exercise yesterday either. My calves were sore and I knew my body just needed a break (& more sleep). It's OK.
I do not envy you in the dating world! That's just sooo hard!
The Treadmill thing, that would totally PISS me off too!
"Oh, sorry, we already bought another one".... What the @#$#$???? That's stinkin' ridiculous!
I hope you take it easy and don't be too hard on yourself! Take a break this weekend and start fresh next week! :-)

Hey Diana take a deep breath, is it worth getting stressed over this…no of course not but you have had a lot on your plate so you are getting into a cycle of stress.
Anyway take a break this weekend, stay in bed and read a good book (that is what I did today and now feel fantastic) and next week will be so much easier.

I did a little cooking yesterday and it calmed me down. Cooking is my Zen. (Photos soon.)
I got a great sleep (I love sleeping on weekends!) and I think I'm going to go for a leisurely bike ride at the gym while watching "Fox & Friends."

I did a little berry picking when I got home from the gym. There are blackberries galore across the road from my apartment. I came out with 3 cups and there are loads not even ripe yet! I'm having me some berries with coconut milk.
I was also delighted to find choke cherries, though not yet ripe. I'll have to get them before the birds do. Also, I found some lovely nightshade and may have stumbled into some not-so-lovely poison ivy. Rubbed my legs with spotted touch-me-not, just in case.

Well this was a little unexpected. My parents' dog killed a snake. So... you guessed it.
I fried up a couple pieces. It was pretty tasty. I'm saving the rest for later. Not sure how I want to use it yet.
