Liquid Smoke

  1. What's your opinion on liquid smoke? I made beef jerky over the weekend and in my research on beef jerky recipes, I've noticed alot call for liquid smoke. I have a bottle in my cupboard and all that's listed in the ingredients is Concentrated Liquid Smoke. What exactly does that consist of besides the smoke part? Are there hidden nitrates or sugar or anything of that nature?

    Far as I know all it is is distilled smoke (becomes liquid through the distilling).

    Nothing weird in it.

    I don't know about the liquid smoke in meat products, but I processed salmon every summer for 10 years and "liquid smoke" is used there.

    In commercially (my family cans our own traditionally smoked fish) canned "smoked" salmon the ingredients of what is listed as liquid smoke on the label are: corn oil, brown sugar, hickory smoke flavoring, mesquite smoke flavoring, salt (mixed in individual batches in giant plastic barrels and then squirted into each can before the lid went on).

  4. I asked my dad a while back about liquid smoke, when wanting to make some jerky. He said that you could make it yourself (though I don't remember the details.) I'm sure it can be found on the net.
