Coconut Milk Instant "Kefir"

    Wow two yummy Primal food discoveries in one day!

    Take 1/2 cup homemade or other yogurt you can trust and add 1/2 cup of CMM. ???? Coconut milk milk.

    You can make CCM by adding CM to water. On the thin but still very good side, use 4 oz of the higher concentration type CM, the 120 calories per 2 oz type. Use more if you have 90 calories per 2 oz. Or more to suit to taste. The former, BTW, has only 60 calories per cup!

    Anyway, tastes like kefir! Fairly high satiety, too. Now, maybe a bit of freezing while whipping.....frozen coconut kefir?

    How can anything that has yoghurt and CM go wrong. I made some instant berry ice cream the other day with Fage and CM, it tasted delicious, better than what I make w/ only CM! OTB, I thought of you today when I made this drink. I think you'll like it. Take a tablespoon of Fage in a glass, fill it with water and whisk thoroughly. Add salt, a dash of grated ginger. It's a traditional Indian drink popular in the summers. But it tastes so good and refreshing, you can have it anytime. Will try your kefir sometime.

    ETA: I also added a pinch of asafetida, but it's an ingredient that's found mostly only in Indian kitchens, so you can give it a skip.
