Coconut Meatballs

This recipe was such a huge hit at my house last week that we had it twice, so I thought'd I'd share. I modified it from the Fat Flush Cookbook(eek!). It's asily doubled.
Coconut Meatballs
1# ground beef
1 finely chopped onion
2 pressed garlic cloves
1 beaten egg
1 cup coconut milk - divided
1 tsp ground cumin (or more)
1 tsp coriander
1/4 tsp cayenne (or more)
1/2 tsp salt
1/2 tsp fish sauce
3 TBS coconut oil
chopped cilantro for sprinkling over topIn a bowl mix the ground beef, onion, garlic, spices, egg, salt and 4 TBS of the coconut milk until combined. Heat coconut oil in skillet. Shape meat mix into balls and fry up until nice and brown (no longer pink inside). Once the meatballs are all done keep them warm in a low oven (like 300 degrees or so). Pour off extra fat if you want. Add the remaining coconut milk to the skillet and scrape up all the nice brown bits. Pour coconut gravy over the meatball, sprinkle with cilantro and serve. YUM!

Holy Guacamole, DebFM - I just finished prepping a batch of buffalo meatballs for tonight's dinner that is incredibly similar to yours. Can't wait.

Mmm this thread made me very hungry. I have a pound of ground beef in the freezer that must be turned into meatballs now.

@MariaNYC, it's about 3 TBS of coconut oil to fry the meatballs in. You do also use 4 TBS of coconut milk to make the meatballs. Clear as mud? ;)
