Coconut-crusted Curried Salmon

    I made this for my mum today and served it with a BAS. She said it tasted like it was from a fine restaurant (she's my mum, she'll say that no matter what I make LOL). But seriously, it tasted pretty good.

    Ingredients:

    Salmon fillet (I used 3)
    ginger paste - 1 tsp
    garlic paste - 1 tsp
    turmeric - 1/4 tsp
    curry powder - 1 tsp
    juice from 1/2 lemon
    salt to taste

    Crust:
    egg - 1
    unsweetened coconut flakes - 5 T (more or less)
    S + P to taste

    Fat of choice for frying

    Remove skin from salmon and marinate with the rest of the spices for 10-15 minutes (or longer). Beat an egg with a dash of salt and pepper. Spread the coconut flakes on a plate. Dip the salmon in egg and then coat it with coconut flakes. Heat fat (I used coconut oil) in a skillet or a cast iron pan and place the salmon fillet and cook on each side for about 2 minutes or till the crust is golden brown. Make sure it's cooked on medium heat so the inside is evenly cooked.

    This is the marinade I used but I think any marinade would work.
