Butternut squash recipes?

    Any good recipes for it that are relatively low carb?

    The carbs are not in the recipes unless you slather brown sugar on the squash. The winter squashes all have moderate carb levels.

    Steam it, then mash or food process with butter, salt, pepper, and a bit of cream until smooth.

    Butternut squash soup

    Roast it in the oven, saute onion/leek, garlic in butter, add the roasted squash, herbs and puree with water/stock/cream. Season w/ salt and pepper.

    I like it cubed and roasted in the oven with EVOO drizzled on top, salt/pepper/thyme/oregano/parsley/nutmeg...roast at 350 for 40ish minutes, turning (or more likely stirring) once in the middle. YUM!

    Ya try it! We did sweet potatoes on the grill a while back (we've only had them twice in the last 6 weeks I think), cut into 1/2 inch slices. We didn't do indirect grilling since the pieces were big enough, plus they got nice grill marks and carmelization :) I hope the butternut squash turns out well!

  9. My version of butternut squash soup -

    1 small onion, diced
    3 cloves garlic, mashed
    1 tbsp butter
    1 squash, cubed, de-skinned
    4 c. chicken broth (or 2 c broth, 2 c water)
    1 tbsp curry powder
    pinch of cinnamon
    Salt and pepper to taste

    Cook the onion and garlic til translucent in the butter. Add squash, broth, spices to the onion. Cook on medium-low heat until liquid is bubbly and the squash is softened. Puree the remaining mixture then top with a dollop of Greek yogurt when serving.

    Delicious.

    I made some mashed that came out really tasty and could probably be used for a filling.
    2 squash halved
    2Tbs salted Butter
    dash of cinnamon
    dash of nutmeg
    Bake the squash cut side down on a greased cookie sheet for 40mins.
    Scoop out insides or process whole squash
    Place squash in bowl and whip with butter, nutmeg, and cinammon
