4x Chicken Coconut Curry

Another crockpot meal for today, since I will be out later this afternoon.
4 chicken breasts thinly sliced and pounded
dredged in Coconut Flour and S&P
Fry in CO to brown.Saute Carrot, Red Bell Pepper, onion and a couple handfuls of green beans in CO just for 5 min
Add enough :) curry powder and red pepper flakes.combine chicken and veggies in crockpot
Put 1 can of CM to deglaze pan and simmer to thicken a little (I find cockpot is always too watery) pour in cockpot.
Sprinkle a handful of coconut flakes on top.
I plan to leave this on HIGH for 4 or 5 hours.
I'll report back. I'm a taste and adjust sort of cook, so we will see if I seasoned it correctly.

CM + chicken cannot go wrong. I'm a BIG fan of CM based curries.

It was OK. Noting from the crockpot is amazing. It was a little over cooked. Good flavor

I would think you could have skipped the crockpot and eaten it right out of the pan, if your chicken was cooked through. That's what I do.
Or just put everything in the crockpot without cooking it first and cook on low for 6 hours. That would work, too.

Sounds delish! I find that if I leave chx in crockpot too long... ot gets mealy and gross. Happened once. I couldnt eat it.

I thought you would have stopped after the deglazing/simmering part, and left it at that! It would have been more crisp that way. It does sound amazing though, I say you try it again without the crock pot if the flavors were what you wanted.

It turned out really well...the only thing I messed up was i tasted the sauce before I put the chicken in, thought it was too spicy, and put some pumpkin in it to cool it down. It tasted pretty good, but the chicken added a lot more moisture than I thought it would which made it a lot less spicy.
The only primal substitution I made was coconut milk for cream....I think the coconut milk added better flavor anyway
