    Coconut Butter

Have y'all known about this all along, or have I just discovered this? I found it at Whole Foods in the nut butter section - ingredient is 100% raw coconut. It's pretty pricey - almost $12 for a jar. I tried it for the first time today. It tastes like sweet monkey love on a spoon! I fear I will become a coconut butter junkie!

I wonder if you make your own by blending shredded coconut with coconut oil. Sounds like I will have to experiment :P

I've been looking for this type of sweet monkey love as well but to no end. Apparently blending your shredded coconut until the yummy oils start to release will create coconut butter. Haven't tried it yet though.
    I grok, therefore I am.

If you have a food processor, you just take dehydrated coconut and run it through the food processor for about 15 minutes. It's way cheaper than buying it by the jar.
