I am certainly not a fan of Matt Stone. It seems like his dietary practices are based on conjecture. But to be fair, palmitic acid does cause insulin resistance. But this is physiological insulin resistance (as opposed to pathological) and it's a good thing if you're fasting (burning body fat) or eating a low-carb diet since it spares glucose for the brain, red blood cells and other tissues that have a requirement for glucose.
