Pork Cutlet with Cauliflower "Rice" Pilaf
Check out my dinner from the other week. This method for making cauliflower "rice" is awesome and definitely something different from the usual green vegetables. Photo here- http://www.pantrybites.com

1/2 cup or more of almond flour to coat

Season the pork cutlets with salt and pepper.
Dip the pork cutlets in the beaten egg mixture.
Coat evenly with the almond flour.
Fry until cooked through on both sides.
Drain on a paper towel before serving.

Love cauliflower rice in any form. Perfect to have with an Indian takeaway curry when you are having a lazy moment.
