Beef &/or Pork Pate
I was a fancy high end restaurant in LA this weekend, ChiSPACCA. The chef there focuses on charcuterie and whole animal cooking, and it was pretty amazing. One dish that really stood out was his pate, and I need to make some now.
I have local organic grass-fed beef and grain-free pork heart, liver, kidney and fat. All I need is a good recipe, so hit me with your favorites. (search seemed to return recipes for chicken liver pate)
Frenched Lamb Chops
