    Bananas are better for making banana splits, plantains are better for making tostones.

    I'm not a plantains expert, but you can buy them green or ripe. For tostones, I cut the green ones into about 1" chunks, fry them in coconut oil, smash them between 2 cutting boards, fry them again, and salt them liberally. I'd worry about the milk solids in butter burning.

    You can fry them in any fat you want. Google "plantains" for recipes.
