    Rind, fat, skin on or off?

    So,on the subject of fats from a different topic I had earlier been discussing, a different matter now rises.Being only a month into this my queries is when eating lovely bacon do I eat rind? Skin off free range chicken? And is it ok to eat the rind on a pork chop? Always under impression these were the not so good fats to consume but I am questioning it after reading about lard etc

    I eat all the skin or rinds I can. nummy. Buy good meat and eat everything you can get your teeth into.

    Discarding any part of an organically raised animal is not primal and an insult to the animal and the farmer. Skin contains collagen, so does your body, eat it and stew the bones. You may discard the beak though it makes a handy wizard hat for a mouse.

    At least now I know not to feel guilty eating it.It's all coming together now.
