    Scottish eggs

I bought 2 pound of grounded meat and am trying to figure out what to do with it... I'm using at least half for mini meatloafs but I was thinking of making Scottish eggs with some of it.

However I was wondering can't you keep them in the freezer?

Found this on Google - it's an ostrich egg, Scotched.

Who says back fat is a bad thing? Maybe on a hairy guy at the beach, but not on a crab.

Good one Joaniel! I have a source that has pullet eggs every once in a while-just perfect for scotch eggs as in more scotch eggs per LB of sausage. I am wondering what spices, etc. I might coat the egg with before wrapping. I tried chipotle pepper last time as an experiment. Not bad. OP I always wondered about freezing HB eggs, too.
