    I enjoyed this as well. I noticed from the first one, (but didnt want to expand and derail the thread) and from this one also... but anyways, it showed me once again, that I probably dont eat enough but still too much fat. I sort of land on about a 3 way split, up to about 40% on occasion - so this has me thinking my fat is still too high. I just looked back through old trackers, and I was more like 22% when I was dropping weight at a good clip. Usually 30 - 50 some odd grams most days. I was also too low on protein, which makes me wonder also.

    looks good! I would use vanilla and probably small pieces of apple that I had previously sauteed in butter.
    Do you think the yogurt is mandatory ? what about full fat milk or light "crème fraîche" ?
    I know coconut flour implies lots of eggs, and 8 eggs! That's a lot. I usually make pancakes or even thin crêpes with maximum 3 eggs, and I get a lot of them (not small like in the picture but thinner). 8 eggs ... I have to think about it ...

    I would definitely try coconut milk to see if it works. And as far as the eggs, 8 does seem like a lot however I end up making smaller pancakes (use a 1/4 cup to pour the batter) and for one person it can last a couple of days.
