I've been trying not to drink liquids within 30 mins of eating. Something about it diluting the stomach fluids that aid digestion. I had coffee later in the day.

I did the same thing while I was trying to cure my self-diagnosed hypochlorydria with Betaine HCl and Pepsin. Chris Kresser has a great series about it bookmarked on his homepage at Chris Kresser if you're interested.

Well I didn't say to eat it every day. But I don't worry too much about n-6 from whole, animal-sourced foods like uncured, pasture-raised bacon, as long as grass-fed beef is my staple and I eat some fatty fish once or thrice a week.

Indeed. Fatty fish is good shit.

I have sardines and anchovies for my dinner tonight.

And yeah, beef and other ruminant meat is the bulk of my meat intake now. Pork is something I might have once or twice a month at most. Even Mark has been more cautious about pork and poultry lately due to the O-6 content of them.
