    Hamburger Buns / Rolls

    Primal Fuel
Anyone have a good recipe for these? Everything is the store is full of bad things (PUFA, soy, etc) I'd prefer avoiding. I've tried using Ezekiel bread but it takes some of the enjoyment out of a burger, if I'm honest. The texture should be light and soft (foam-like) in order to better soak up that grease...

I forgot where I found this recipe for Oopsie Bread. No idea where it got its name but it can work in place of a bun, tortilla, crepe or even pizza crust depending on the size you make it. Only 4 carbs in the whole recipe. iI didn't use the psyllium. Just love them.

    Oopsie Bread
    6–8 depending on size.

    3 eggs
100 grams (3.5 ounces) of cream cheese
    a pinch of salt
tablespoon fiberhusk / psyllium seed husks (can be excluded)
teaspoon baking powder (can be excluded)
•Separate the eggs, with the egg whites in one bowl and the egg yolks in another.
•Whip the egg whites together with the salt until very stiff. You should be able to turn the bowl over without the egg whites moving.
•Mix the egg yolks and the cream cheese well. If you choose, add the psyllium seed husk and baking powder (this makes the Oopsie more bread-like).
•Gently fold the egg whites into the egg yolk mix – try to keep the air in the egg whites.
•Put 6 large or 8 smaller oopsies on a baking tray.
•Bake in the middle of the oven at 150 C (300 F) for about 25 minutes – until they turn golden.
•You can eat Oopsies as bread or use them as a bun for a hotdog or hamburger. You can also put different kinds of seeds on them before baking them, for instance poppy, sesame or sunflower seeds. One big Oopsie can be used for a swiss roll: Add a generous layer of whipped cream and some berries. Enjoy.

I like to use lettuce leaves for things like this - especially tacos. Or, I skip the bun and cut it up with a knife and fork.

Oh yeah, I liked oopsie rolls too. I just didn't like how they kept. But that was probably just me :P I need to try again considering I have an unlimited supply of eggs.

I have been putting them between waxed paper and storing in a zip bag in the fridge all week. They microwave fine or I thing you could put one in a dry cast iron pan to crisp a little for a pizza type crust or something. Haven't tried freezing them.

Ditto. I prefer it without the bun now--I feel like the bun just dilutes the flavor.
