    Lamb Loin?

    Primal Fuel
Folks, I am going to cook lamb loin tonight. I am very new to cooking lamb, so I would appreciate any advice.

Will I spoil it if I simply salt & pepper it and broil? Would you recommend any other spice? I have frozen rosemary and tons of herbs in the yard. I would not have time to marinate it for more than a few minutes though.

Rub it down with salt, black pepper, garlic, and rosemary. Let it sit at room temperature for an hour like that, then drizzle a very little bit of olive oil on top. While covered slow cook (275 degrees), then after 2-3 hours uncover and raise temperature to 475 and cook until crispy. It's awesome.

Unfortunately I can't do 3+ hours of cooking. It will be at room temperature since it's thawing in the sink. If I just do the rub& let think about things for 20 min or so, then do only the broiling part, will it be Okay?

I have garlic from the garden, so no problems there.

As long as it is a thin cut of meat you should be good.

Thanks, will give it a shot. Love lamb, but that's our first time buying the animal since hubby thought he did not like it.
