    How to make kimchi

    How guys any good recipes out there or help with making this for the 1st time.
    I love it but all the Korean shops near me all have soy sauce in etc .

    Really, you can buy straight kimchi in jars or bulk but they make it with soy sauce? That isn't traditional at all.

    Yes I live in the biggest Korean community outside Korea . All their kimchi products have soy sauce in !!!

    I used the recipe from Wild Fermentation by Sandor Katz the first time I made kimchi. It is a good starting point and super easy.

    I have made kimchi and no soy sauce... Salted cabbage rinsed well, daikon radish, garlic, ginger and most important Korean red pepper. Can also add bok choy. I think some people put a little sugar in it to help with the fermenting. None of my Korean friends in Alaska use soy sauce in their kimchi that I am aware of.
