I discovered lambs liver a little while ago and fell in love! It's so mild and has a much more pleasant after-taste than beef liver does. I created this little recipe in an attempt to have more liver in my life! These little gems freeze really well and can be re-heated in the toaster oven rather quickly. Add them into a sauce on top of zucchini noodles or on a pillow of cauliflower mash. Delicious.
