    Baking in salt

    Primal Fuel
    Who has tried this?
    Covering whole meat / fish in a salt crust.
    I use sea salt with some egg mixed in or water to make a paste & also can add herbs to the mix And cover baking try on bottom lay protein on then cover 2cm thick all over (not the head with fish) .

    Result .
    Great!

    Anyone else tried?

    I SLATHERED a chicken in salt one time. I put a good layer of coarse sea salt on the bottom of a 13x9" pyrex dish and laid the chicken on top of that. It was SO GOOD. It was very moist inside and the salty skin was amazing. I did have to tap off some of the salt before eating because it was basically like a crust. A bit too much to eat, but excellent to impart/preserve flavor.

    Yes I've done chicken / seabass . All amazing flavour sooo moist!

    Yes! Here in Spain a popular dish is pescado a la sal - basically a whole fish covered in sea salt and baked in the oven. Dorada is the commonly used fish which I believe is from the Mediterranean sea. Sea salt is extremely cheap here. Why not cover the head?

    So then u now it's cooked by looking at the eyes.
    But , I love going in for the meat on the cheeks & back of the head !! So sweet n tender .

    There's a restaurant in NYC called Esca that has that as a their specialty, they call it "Branzino Per Due" (Whole Mediterranean Sea bass for two cooked in sea salt).

    I had it a year or so ago and it was the best fish I ever had. They would bring it out on a big plank all covered with the salt mixture to show you, and then bring it back in to remove the crust and prepare it to eat.

    Prime rib in rock salt is amazing. We've done it at home, plus there is a fantastic restaurant renowned for it's prime rib up here that does it that way.
