Made this on my narrow boat with things I had on board when I couldn't find a shop. Delicious!

2 chicken breast portions bone in, one onion sliced, one long sweet red pepper cut into squares, six celery stalks sliced, salt and pepper, about 1.5 teaspoons dried dill, lard to cook in and 2 tablespoons double cream

Melt lard in frying pan (needs to have lid). Cook onion until beginning to soften. Add chicken and brown on both sides. Add celery, red pepper, salt, pepper and dill and turn down then cover with lid

Cook, stirring occasionally until veg release some juice. Remove lid, turn up to reduce juice, stir in cream and heat to almost boiling and forming a sauce. Serve. Delicious!
