My dinner last night...
For any curry lovers, I am going to jot down this recipe. It's easy and delicious. I made it for dinner and I could have probably eaten the whole pot, if I didn't have to share.
Garlic ( I used three cloves, my house loves garlic)
Can of coconut milk
Chicken ( I used three breasts)
IN a large pot, melt butter, toss in small diced onion, chopped garlic, and a tbsp of curry powder. Let that cook/simmer on medium high heat until onion transparent.
Add chicken, chopped to whatever size you like, and another tbsp of curry powder. Cook chicken for about 10 min, stirring often.
Then add 1 can of coconut milk, and the tomato paste. I used half a can of tomato paste. I also added another tbsp of curry powder after I added the wet ingredients. You can always add as much as you like, depending on how strong you like your curry flavor. ( I didn't do too much as I was feeding kids too) Stir it all up, salt to taste, and let cook/simmer for another 15-20 min, until chicken is fully cooked.
I made cauliflower "rice" ( simmered in chicken stock ) and served the curry chicken on top. It was soooooo delicious, and it's easy and quick to make. I suspect I'll be making this often
