Vegetarian and Paleo friendly recipes for potluck

    Hey all,

So I just started a new job, and at the end of the month when our training is done, we're having a potluck to celebrate. As far as I know I'm the only one with actual food allergies, but I know one person in the group is vegetarian. Is there any way I could make something that would be able to accommodate both of us, but also be appealing to the other 10 people who will eat anything?

Bring bacon wrapped, almond-stuffed dates for you, and a watermelon salad with pistachios, feta cheese, and balsamic reduction for you....and her

Or mini-quiches (no crust) would be a good option if she is not vegan - I make them for work, some vegetarian and some with bacon.

Fruit kebabs are awesome (cubes of pineapple, watermelon, banana, orange and kiwifruit).

A tray of roasted root vegetables?

Rice noodle salad with chicken on the side. I don't use a recipe but here's one that looks pretty good:

That looks good! I'm eating rice and rice products now pretty regularly and it's been too damn hot lately to eat much more than salads. Gonna print this one for sure.
