Leftovers tonight. Last night, we had Enchiladas Suizas (our very infrequent cheesy treat) with the filling made from beef mince, prawns and cauliflower. Loads of filling left, so I'll pep that up, add in a few mushrooms and serve over Savoy cabbage, steamed and wetted up in goose fat. Yum!

I've also got a couple of large mushrooms that want using today. I reckon they'll make a nice base for a Welsh rarebit starter.

I had braised pork shanks with an apple onion gravy, cauliflower mash and a spinach salad. It was so good.

A spicy seafood and chicken paella without the rice

New Zealand Green lipped mussels, clams, onion, celery, tomatoes, herbs and spices in a pan then poached 5 chicken legs on the bone in the broth.

shredded the chicken legs then covered with the seafood and veg broth.

    Feast tonight:
Steamed sweet potato, sautéed cauliflower, boiled bak choi, steamed yellow lentils, mint chutney and tomato chutney.
I turned the leftover water used to boil the bak choi into a soup with salt, pepper and chilli flakes.

    Yummy!

Chicken, leek and mushroom "pie", topped with mashed cauliflower. Brambles from the neighbourhood and double cream for pudding.
