Use coconut oil instead...
so i wanna make some coconut bread this weekend but i don't eat dairy so what should i use in replace of the butter? any suggestions?? these are the ingredients listed on this site...
Ingredients:
6 eggs
1/2 cups ghee (or butter)
1-2 tablespoon honey, depending on taste
1/2 teaspoon sea salt
1 teaspoon baking powder
3/4 cup coconut flour
Use coconut oil instead...
the recipe I used called for coconut oil - 1/2 cup. One word of warning, really grease your tin or it'll be a bitch to get out! Not really sure I was overly enamoured of it to be honest, a bit on the dry side, but that was my first attempt. Good luck, let us know how you get on!

Whenever I make anything with coconut flour, I always thin it out with a little water so it's a little more light and fluffy. That coconut flour absorbs most anything you throw at it...darn stuff!

I use this same recipe, but I add extra liquid (cream or coconut milk) to thin the batter and make it moister (it's too thick and dense, as is) along with some sparking water to add fluffiness and I separate the eggs, whip the whites and fold them into the batter last. It makes a HUGE difference in fluffiness!
