Polpettine are little Italian meatballs or mini meatloaves (polpettone are the bigger normal sized meatloaves) and are great hot, cold, or room temperature. Serving them with lemon juice rather than a tomato based sauce gives them a fresh "summery" feel and helps keep the house cooler since you don't need to cook up a sauce. I used a 50/50 split of tapioca and coconut flour for the outside crust and they turned out great.
