Depends on the kind of veggies. I think I probably could, if I went to town on avos and sweet potatoes.

Yes. If you consume enough calories you'll gain weight. But non starchy vegetables are so low in calories that it is probably physically impossible to eat enough to get enough calories to gain fat from them.

You can gain fat from eating too much of anything, veggies included. There is a man at an obesity clinic in NY that reached epic proportions eating only oranges, but lots of them.
