Olive oil is 70% MUFA and 14% SFA

    While

Coconut oil is 6.6% MUFA and 85% SFA

A diet higher in MUFAs vs a diet higher in SFA which do you prefer?

I would use olive oil for salad dressings, coconut oil for cooking in (but only if I'm out of butter or dripping).

So, higher consumption of olive oil in summer, butter/dripping in winter.

I've not used Olive Oil since I discovered Coconut Oil..I put it on anything and even eat from a spoon out of the jar....expensive stuff though.
Also use butter for cooking and putting on boiled vegetables (sometimes with coconut oil too)

Interesting question. I eat lots of coconut oil for the MCTs and lots of SFAs because they are delicious and natural. I don't do proportions or measurements but there may be an advantageous balance.

    Food that tastes good.
I pick the right fat for the food being prepared. I don't try to track or shape an overall balance of when that is olive / coconut / butter / lard / whatever.

Both oils are "refined" in the sense that you take the original fruit and extract the fat so it is easy to overdo with those. This said, whether they are mono-unsat or sat does not matter too much except for shelf-life and rancidity. Keep your mono-unsat in cool dark places but otherwise, use them both depending on recipe / dish / etc.

I tend to use ghee and fat rendered from fatty meat (duck and beef mostly). I don't care too much about coconut oil or its SFA content. Olive oil only for salad dressing but I prefer eating full olives
