    Coconut Pancakes

    Anyone got a recipe for these that don't make them completely dry? Have always struggled to get these right and today was no different. Ingredients were eggs, coconut flour, cinnamon, coconut milk and blueberries. I thought the blueberries melting on the pan through the pancakes might help but these were tough to finish

    How about trying banana pancakes. 1 ripe banana, 2 eggs, vanilla and cinnamon to taste. Blend it up and cook with a good amount of oil. They are delicious, flatter like a crepe but they are sweet and the perfect "pancake" consistency. No need for syrup at all. My first attempt were almond pancakes, they were freaking disgusting!! Dry as dirt, these are amazing, cheap and easy! Great with a side of bacon.

    I found this recipe today and tried it. Turned out delicious!

    4 eggs - room temp
    1 cup coconut milk
    2 tsp Vanilla
    1 tbsp Honey
    1/2 cup coconut flour
    1/2 tsp salt
    1/4 tsp cinnamon
    1 tsp baking powder.
    ( this recipe said to use a stand mixer, which I don't have, so I just used an electric hand beater)

    -Heat pan to medium. Beat eggs in mixer until frothy. Mix in milk, vanilla, and honey.
    -In small bowl, combine coconut flour, baking soda, salt and cinnamon, then whisk together
    -Combine dry with wet and mix for about 30 sec, then scrape sides. Mix again medium-high for another min or until flour is mixed completely. ( You don't want to over mix )
    -Grease pan with butter, cook for 3 minutes each side.

    I recommend making smaller sized pancakes as they cook much better.
    My kids gobbled these up, and my husband ( who is a chef ) said - "These are moist but dense, very filling, which is good"

    I also threw some frozen berry mix I had in my freezer and cooked in a small saucepan with a dash of cinnamon and tiny bit of honey to serve on top.

    Always too dry with coconut flour IMO. Try:

    Healthy Tbsp of applesauce (or mushy banana)
    Almond flour
    Ground flax seed
    Bit of milk or other liquid

    Of course, you have to make a larger pancake to look like the head of a dog and two skinny pancakes to serve as ears. Add blueberries for nose and eyes and a slice of dried mango for the dog's tongue. At least that's how is is done around here.

    When using coconut flour you need to use a higher ratio of eggs because the flour is just so dense and dry. I use 6 eggs per cup of flour.

    problem with using almond or flax flour is the PUFA's and excess heating -
