Now I love pumpkin, but winter has only just begun and I am already starting to feel a little "over" it.

I do pumpkin mash on its own or as a topping for cottage pie. Sometimes has sour cream or coconut cream in it.

Roast diced pumpkin with bacon.

Pumpkin soup.

Sliced pumpkin quiche.

Leftover pumpkin frittatas.

My usual seasonings are spices such as nutmeg or cummin, or herbs such as tarragon, thyme or basil.

If you can give me fresh inspiration, I'd appreciate it. I can buy a huge pumpkin for $3 at present. It's enough to last a week, but I don't know if I can face another week of pumpkin eating unless I can think of something else to do with it.
