Wild Boar Heart
Ok, I have a brand new pig to get ready for the freezer. (thanks to my daughter's wonderful hunter boyfriend), yum yum. I usually get my butcher to mince up the heart and some other bits for my dog, but I am branching out a little and I am thinking of cooking the heart myself. I have tried beef heart and found it to be ok, but have never eaten boar heart.
Has anyone had it and does anyone have a good recipe they have tried?
I do this with lamb , remove the white fat outside then slice in half, clean & remove all cartridge veins etc.
then add herbs spices , with pork I might use cumin or go for some fresh sage thyme then add it to griddle pan on high & cook 2 mins aside keeping it slightly pink inside
