Coconut milk pudding?
I have read in a few places of people mixing a can of coconut milk with other stuff to make pudding. I like the fat from the coconut milk but right now the only way I can eat it is if I make a smoothie with it and add berries so then it gets kinda carby. Anyone have any ideas what else i can do with it? Thanks!
You can make a custard! Mix ~1 cup of coconut milk with one egg (add an egg yolk for extra creaminess). Whisk the egg, heat the coconut milk, slowly add the milk to the egg while whisking, then bake in a water bath until the desired consistency is reached. If you want it more liquid-y like a pudding, you can take it out early and just let it chill in the fridge. You might even be able to skip the baking step entirely. Hmmm. I'll have to try that!
