Goat Milk Ice Cream
This is a very basic simple recipe for goat milk ice cream. You will need an ice cream maker though.
-2 cups goat milk (I use raw)
-1.5 tbs vanilla extract
-sweetener to taste (I use liquid stevia)
-1 tbs gelatin
- 1/2-1/3 tsp guar gum
Dissolve gelatin in 1/4 cup water. Then add 1/4 cup hot water. Mix together and then add in a couple of ice cubes.
Then combine the gelatin mixture and the first 3 ingredients in a blender. Sprinkle the guar gum on top of the liquid (so it doesn't clump). Blend. Turn your ice cream maker on and pour it in.
When I make this it usually takes about 20 minutes the get firm.
Obviously don't make this if you have leaky gut and/or cannot tolerate guar gum. I personally haven't noticed any ill effects from that small amount.

Awh, too bad I don't have an ice cream machine, although I have made delicious frozen treats without one so far!
