Question How do you Cook Sweetbread?

I saw some beef sweetbread at the butcher today (new food to me) and I was wondering if anyone knows how to cook it?

    Thanks in advance,
    -Grok

    I'm cooking some right now!

It's quite easy. If they have been cleaned by the butcher (usually the case), this is what you do:

    - Cut into ~ 4 oz pieces.
    - Sprinke with some salt and lemon juice.
    - Grill for ~ 15 - 25 min / side or broil in hi for 20-30 min/side.

Add some more lemon juice before serving.

Mark's got a yummy looking sweetbread salad on here somewhere. I've been wanting to try it, but I haven't gotten them from my butcher yet.

    I don't

But Chris Cosentino, the chef/partner at Incanto in NoCal has great information on "fifth quarter" foods on his blog, youtube etc

    His website is http://www.offalgood.com/

"On offer are lamb’s necks, pig trotters and a five-course nose-to-tail tasting menu perhaps including venison kidneys and chocolate-blood panna cotta.""

I'm drooling over the thought of a chocolate blood panna cotta! I was just in the Bay Area this past weekend. I will be sure to check it out next time I go down there. I imagine it's pretty expensive though.

Thanks for all the great links!

Not particularly. The consistency is similar to that of scallops. The taste is mild, a little like what a mixture of beef and chicken would taste like. Give it a try. Don't add bacon or anything to it the first time, the taste by itself is quite appealing. A little salt and lemon is all I would add to them.
