Most nutritious onions?
I love making different types of sauteed onions with every meal, but I'd like to stick with just one type, in order to be able to afford other vegetables. So out of the following choices, which are the most nutritious, and which are not all that special in terms of nutrition?: white onions, yellow onions, red onions, shallots, scallions, and leeks.
Technically, shallots are the healthiest, but tend to be more expensive. Next to those, yellow onions for sure. They have the highest flavonoid content.
On a side note, if you're trying to buy in bulk, avoid scallions. They wilt and go bad the fastest.
