What to do with leftover broth & veggies from a pot roast?
I made a pot roast today that turned out really yummy. There will be no problem here getting the meat all eaten up in no time flat. But I have a lot of veggies (mostly carrots and a little onions) and broth left that the roast was cooked in - way more than will get eaten with the roast itself. Any suggestions for what I can do with them?
Mash the veggies into the broth into a sort of gravy like liquid and either eat by itself or pour onto tomorrow's meal.
Yes, thanks - I was just thinking that I could mash or chop the veggies and cut up some of the leftover roast and make a soup/stew out of it.
I had the same problem and added sauerkraut to the broth. Was really nice, next time I might add some tomato paste. You can also add water and make soup.
