Newbie looking for help! (diet and fitness routine)

These days there's so much information on the internet that you can easily get lost.I need you to help me and tell me am I doing it right?
Weight: 108 lbs
Goals: Body recomposition - Build muscle and burn fat at the same time.
I do 5 sets of 5 reps for each exercise:Push up,pull up (chair assisted so far..) , Squat , Plank. About 1 min of rest between sets.I do them with a weight vest that weights 25 pounds which is pretty heavy for me right now... (No access to a gym) I exercise 3 times a week.No cardio,except walking.
I'd say it's pretty clean.Not 100 % paleo,though.I got interested in Leangains program not long ago,so I fast from 19:00 till about 10:00 in the morning.But before that,if I would eat breakfast it would usually be eggs with bacon and butter or cottage cheese.
Workout day example:
Breakfast: Cup of coffee
1st meal: Pork or Turkey with vegetables/Fish and vegetables.
2nd meal: Meatballs with vegetables/chicken (roasted,steamed,grilled) and sometimes a peace of dark chocolate
3rd meal (post workout): Cottage Cheese with dried fruit or banana,Salmon. (It's my biggest meal)
Rest day example:
Breakfast: Cup of Coffee
1st meal: Meat with vegetables/Eggs
2nd meal: Meat with vegetables/Soup/Stew
3rd meal: Cottage Cheese/nuts/sunflower seeds/Fish .
Sounds pretty boring,I know.But the vegetables and meat vary.
Do you think my regime is good enough?What should I change?
I'm really not any sort of expert on different programs, except for what I read here when guys argue for or against one. But how's it working out for you? What are your goals, and how will you know you are achieving them?

I started doing those exercises two weeks ago and I can already see my arms getting bigger and I'm not sure but I think my legs got bigger,too.Though I didn't see any change in my weight.
